As a first-generation Canadian-Filipino, my parents were the first in their family to immigrate from the Philippines to Ontario, Canada. Growing up, there was always an abundant selection of delicious Filipino cuisine. I have selected a few comfort foods that bring nostalgic feelings and sentimental value from my childhood. Hopefully, they also resonate with you!
Lugaw
First, there is Lugaw. There are several variations, but we will focus on the original today. It is a simple & hearty rice porridge comprised of ginger, spices, aromatics, and rice. Lastly, it is topped with garlic, scallions, and eggs. My mom would cook me lugaw whenever I was sick or feeling under the weather; it would always warm my heart & soul.
Sopas
Next is Sopas, a creamy chicken soup that keeps you warm on a cold, rainy day! Sopas is comprised of shredded chicken breasts, aromatics, carrots, cabbage, chicken stock, pasta, and milk!
Champorado
Finally, for everyone with a sweet tooth, we have Champorado, which is a Filipino chocolate rice porridge. It’s made with five simple ingredients: Rice, chocolate powder/syrup, sugar, evaporated milk, and water. It is a guaranteed hit between kids and adults! I remember waking up to a hot bowl full of this chocolatey deliciousness in the morning—the best thing a kid could ask for. A sweat treat for breakfast? Please and thank you!
